PostSubject: Recipe of the Day......Moroccan Lamb tagine   Tue May 01, 2012 5:41 pm

SERVES 4 - 10 POINTS PER SERVING

2 teaspoons ground ginger
2 teaspoons ground coriander
1 teaspoon turmeric
1/2 teaspoon cayenne or chilli powder
450gms lean lamb steaks visible fat removed and cubed
low fat cooking spray
1 red onion sliced
2 garlic cloves crushed
400gm carton of passata
5 fl oz lamb or chicken stock
60gms either dried apricots or raisins

for the couscous

1 lemon
1 courgette cut into chunks
1 red pepper deseeded and cut into chunks
1 yellow pepper deseeded and cut into chunks
1 tablespoon coriander seeds crushed roughly
150gms dried couscous
200 mls boiling water

you will need a lidded flameproof and ovenproof pan

1 preheat oven to gas mark5/190 C/fan oven 170C
mix together the spices on a shallow plate add the lamb and toss to coat.
spray the pan with the cooking spray and heat until hot. Add the lamb and brown for 3-5 mins.
Add the remaining tagine ingredients bring to the boil cover and transfer to the oven cook for 1 hour

2 for the couscous finely grate the zest of the lemon and set aside. quarter the lemon and place is a shallow roasting tin with the courgette and peppers. scatter over the coriander seeds and spray with the cooking spray. roast for 30-40 mins turning occasionally until slightly charred.

3 meanwhile put the couscous in a bowl and pour over the boiling water cover with clingfilm and leave to soak for 10 mins. fluff with a fork and stir into the roast vegetables for the final 5 mins cooking time

4 just before serving stir in the lemon zest into the tagine.

This is another of my favourites its also lovely served with boiled rice

Lamb is my favouritistablydelish meat ever

Chicken is a close second, Dont forget bacon Pork crackling is yummy too Big fat juicy steak
